I love this light and healthy detox soup that is a great immunity booster! Using your vegetables and herbs on hand along with a bit of pasta, this easy to make soup makes a great lunch!

Recipe:
*This recipe is for 2 servings – using medium pot
1 tsp minced garlic
1/4 cup carrots (circles or shredded)
1/4 cup diced celery
1/4 cup diced onion
1/4 cup diced bell peppers
1 cup pasta
3 – 4 cups chicken broth
Optional Add Ins: cooked chicken, broccoli or cauliflower florets, kale/spinach/cabbage
Herbs: 1-2 tsp basil or dill
Add 1 tbsp butter to bottom of pot, add garlic, celery, onion and peppers, let simmer for a minute.
Add in rest of ingredients, cook until pasta is tender
